To start, we propose the alpine char eggs with burnt white onion, red Valtellinese polenta, and raspberry. This appetizer offers a blend of flavors and textures that will surprise your palate.
The Anglo-Saxon duck Bon Bon with whipped Parmigiano Reggiano zabaglione, Romanesco artichoke, and historic Cocchi Vermouth is a delicate dish that perfectly balances the duck's flavor with the strong taste of Parmigiano, accompanied by a crispy artichoke side.
The elderflower and ginger sorbet served as an intermezzo between the main courses is an excellent choice to cleanse the palate and prepare for the next dish.
The Acquerello risotto with wild asparagus, grilled lagoon eel, kefir, and wood sorrel is the second course that offers a perfect blend of flavors and contrasts. The eel complements the crispy asparagus and the sour taste of kefir.
For the main course, we have selected the Km0 lamb sirloin, infused with thyme and juniper jus, and black garlic monk's beard. The succulent and delicate lamb is cooked to perfection and accompanied by a light and fragrant sauce.
Finally, the dessert: the Colomba cake, dark chocolate, and mango is a tasty and refined dessert. The Colomba, a typical Easter cake, combines with the creaminess of chocolate and the freshness of mango.
