A menu lead by creativity
The menu opens with an entrée: Crystal bread, 40-month-old Parmesan and hooked black truffle. The appetizer is entrusted to the Tartare di Fassona from Piedmont, its marrow, myrtle pepper, marinated mountain yolk, morels and Alpine wheat bread with sourdough. The first is also meat-based and creatively revisits a great classic of Alpine cuisine: ravioli stuffed with goat ricotta, KM0 suckling lamb and red beetroot. As a second course, “Peter’s Farm” veal fillet, its jus, malga butter, grilled carrot, sorrel and morello cherries. Final dessert with raspberry, rhubarb, gianduia and Sancho pepper.
